
Farmers Market Salad

Serves 4. Vegan, Gluten-free
Ingredients
- 1 bag mixed salad greens
- 1/4 red cabbage, sliced
- 1 watermelon radish, sliced into thin rounds
- 2 large carrots, crinkle cut on a mandoline if available
- 1 large red beet, cut into matchsticks
- 1 large golden beet, cut into matchsticks
- 1 large chioggia beet, sliced into thin rounds
- 1/4 cup bean sprouts
- 2 Kvass Stained Eggs, halved (optional)
- 3 heaping T Organic Turmeric Kraut, Organic Ginger Carrots, Organic Beets, Organic Kimchi, Organic Garlic Kraut, Organic Red Cabbage, or Organic Sauerkraut
Directions
This is a really fun salad to make! Go to your local farmers market, co-op or natural food store and choose the most vibrant local vegetables available. Depending on the season this can include, but certainly not be limited to: salad greens, rainbow carrots, red cabbage, green cabbage, golden beets, chioggia beets, red beets, bean sprouts, mushrooms, watermelon radishes, breakfast radishes, sweet peppers, corn, heirloom tomatoes, cucumbers, fennel, peas…the list goes on!
Put your salad greens in a bowl and top with raw sliced vegetables. For fun, you can experiment with different thicknesses and shapes of slices. Think: medallions, sticks, crinkle cut and dice cut.
Optional: top with halved Kvass Stained Eggs.
Drizzle with olive oil and/or Organic Beet Kvass and top with heaping spoonfuls of your choice ferment. These salads go well with Organic Sauerkraut, Organic Turmeric Kraut, Organic Kimchi, Organic Beets, Organic Ginger Carrots, Organic Red Cabbage or Organic Garlic Kraut. Have fun with it – it will come out a little differently each time!
